10. Tofu "Egg Salad" baguette sandwiches

Press the water out of a block of firm tofu and mash. Mince red onion, shallots, celery, sliced radish and black olives. Mix the tofu and veggies with vegan mayonnaise, Jax Tofu seasoning (or nutritional yeast), Dijon mustard, sweet pickle relish and chopped fresh parsley. I put a good helping of tofu salad on a split multigrain baguette bottom and melted Violife “cheddar” cheese on top in the microwave. Romain lettuce and sliced tomato to finish the sandwich.
