Mostly vegan here too. It’s not exactly the same as the real thing, but it comes very close. We only use it occasionally when we are in the mood for an egg sandwich, omelette, quiche or potato pancakes. For baking, or as a binder, I prefer to use flax eggs for most things (1Tbsp flax meal to 3 Tbsp water, mix wait 15 minutes until it thickens).
I just want to say that Just Egg was pricey compared to real eggs, but maybe since the tremendous increase in egg prices, it may make sense. I haven’t used it in a few months.
