1/4 cup brown sugar
2 tea NaCl …. Sea salt, kosher salt, regular salt … it is all salt. Do not use left over ice
melt sidewalk salt
2 tea pepper
1 tea garlic powder
1 tea onion …. Dried or powder
1 tea mustard powder
1 tea cinnamon
1/2 tea celery salt
2 tea red pepper seeds or penzy’s northwoods seasoning or chipotle


Rub on meat and bake for 2 hours or so @ 150 F. Finish on charcoal grill with
some smoke wood chips in water in Al pan on top of the Charcoal the before it gets
Going …. About 30 minutes. Indirect heat on the meat. Cook on Al foil not
on the grill rack. Add any left over dry rub to meat before cooking. Do not take meat
off grill until you see the smoke action for at least 15 to 20 minutes. Flip meat 1 time.
Let meat rest for 5 to 10 minutes on a warm plate before serving. I like chicken as my meat but pork
tender loin, brisket, turkey, or salmon (soaked cedar plank) are all good.
