As a plus, I used rutabaga that I par boiled with saffron. Then, I added the saffron water to the egg noodle water. So, both were infused with it, though the noodles were barely yellowed by it.
I also cheated by using frozen pearl onions. It's such a pain to pop soaked fresh pearl onions out of the skin. Cuts over 20 minutes off prep time.
Everything else was fresh, including hand sliced cremini mushrooms.
My wife loved it.
