When you first make a scan Epson software gives you a “preview” option before the final scan. It will run a low-res scan and give you the option of clicking and dragging a boundary around just what you want to keep. Once you’re ready for the final scan you can set it for 300dpi (printing resolution for images) and then hit “scan.” Or hit “scan” and then a window pops up asking what resolution you want - depends on the exact software.
