What's for Dinner, Sat., May 30, 2026

Black Pepper Tuna Tataki with Edamame Succotash and Marinated Cabbage.*

There is a dipping sauce on the side called "Grapefruit Ponzu."

Kombucha: cherry ginger.

Dessert: Decaf with almond biscotti.

*Recipe is from my cookbook Dishing Up New Jersey, by John Holl.

1. Tofu in spicy peanut butter sauce

I fried the last 2 slabs of the tofu I had marinated in buttermilk. I cut the slabs into cubes and made a spicy peanut butter sauce. Use chunky peanut butter, soy sauce, ginger, cayenne, and browned some onion. When the sauce was ready, I put some of the tofu cubes in and topped with some frozen celery. Lots of flavor, all kinds of crunch.

I had it with white rice and noodles and veggies from the soup I made yesterday.

Frozen blueberries and a piece of dark chocolate for dessert.

Grilled tomahawk lamb chops marinated in olive oil, Balsamic vinegar, salt & pepper and served with grilled potato wedges and grilled asparagus.

I love cooking outside!

BTW... My grandfather was once upon a time the lighthouse keeper for the Cape May light...

I love to visit the lighthouses and think about what it must have been like, especially back in the 1800s.

New Jersey was always an adventure in eating + the food was indescribably delicious -- world cuisine in a nutshell...

Looking at my cookbooks, I'm well on the way to collecting one from every state...Which gives me an idea
for celebrating America's 250th birthday... With 52 weeks in a year + 50 states + 14 territories... I may try
sampling a week's worth of dishes from each state + Washington, DC + / or Puerto Rico, American Samoa,
Guam, the Northern Mariana Islands + the US Virgin Islands.

The Food Network has "The United Plates of America". Their list of America's iconic foods is found here:

4. I'm going to grill some lamb burgers.

First grill-out of the season!

To a pound of ground local lamb I’ve added some cumin, turmeric, ras al hanout, chopped cilantro, a big clove of grated garlic, an egg and some bread crumbs. Smushed it all around and formed 5 oblong burgers, which have been chilling in the fridge.
Also grilling up some eggplant rounds. All served with a fresh-mint and lemon yogurt sauce, white rice, and a tomato/cucumber/basil salad. Pinot noir, also.
Later, a brownie beneath some coffee ice cream while we watch a show….

Got a couple Quorn roasts (a mushroom-based seitan-type thingie) on the cheap and had a proper Sunday dinner-type meal tonight—roasted with tatties and carrots and with a nice brown gravy.

Pretty respectable for something that took hardly any effort.

… especially for people who think they don’t want to eat soy. They have several versions, including nuggets, burgers, and these roasts—which are about the size of a pound of ground meat in a plastic tube. Takes seasoning well and while it’s not an exact duplicate of a chicken breast (it’s less tender, perhaps), it’s a nice mild flavour. I got these at a discount supermarket in town and they had a freezer case FULL of them for only $2.50 each, so I’ll need to stock up the deep freeze with them.

Should’’ve roasted the pair of them together so I could use the second one to slice for sandwiches.

I typically just make my own seitan (I buy gluten flour in 25# bags) but sometimes, you just want to be able to chuck dinner in the oven for an hour and be done with it.
