Breakfast Tuesday 28 October 2025

Later this morning I'll finish off the last half of yesterdays scrambled tofu veggie scramble with toast and have a pot of hot tea .

My sister is coming to visit this weekend & she loves cream of wheat, I wonder if she would like this instead 🤔. I do not like cream of wheat

Will do on ear rubs for Dunc. He’s busy snuggling his brother 20 in bed Dunc woke up with me. Went out to use the yard then headed off to cuddle some more cuddling is Duncs core.

Diced roasted potatoes are sautéed with onions and bell peppers as well as chunks of tender, smoky braised beef short ribs. The hash is served with a side of fluffy scrambled eggs, and later, lunch-like:

Mediterranean Citrus & Carrot Salad with Citrus Vinaigrette, a great salad which I'll share with my daughter!
featuring vibrant flavors like castelvetrano olives, fresh herbs, and rose water. The carrots, red onions, fennel, olives, and radishes get seasoned to perfection and marinate for a few hours. Then the marinated mix is adorned with a garnish of lettuce, orange supremes, mint leaves, and cilantro. Mounded in the center of the plate and drizzled with rose water, this dish is finished with sliced almonds and citrus dressing for a refreshing burst of texture and acidity.

Fried Cornmeal Mush
This fried cornmeal mush recipe reminds me of the 'good ol' days'. I hope you enjoy this great tasting recipe.

Prep Time: 20 mins
Cook Time: 10 mins
Additional Time: 12 hrs 50 mins
Total Time: 13 hrs 20 mins
Servings: 4
Ingredients
3 cups water

1 cup yellow cornmeal

1 teaspoon salt

1 tablespoon unsalted butter

Directions
Lightly grease a 9x5-inch loaf pan; set aside

Heat water in a medium saucepan to a boil; reduce heat to medium. Stir in cornmeal and salt; cook, stirring regularly, until thick.

Transfer cornmeal mixture to prepared loaf pan. Cover and refrigerate overnight.

Slice cornmeal mush into 1-inch-wide slices. Melt butter in a skillet over medium-high heat. Add cornmeal slices; cook until golden brown on both sides.

I was alone with my coffee until I toasted a whole grain English muffin and buttered it. The Duckster, having a keen sense of smell and impeccable sense of timing, joined me after I sat down with the buttered muffin. He is now speaking about the school bus that backs into our lane (beep, beep, beep).
