Chocolate Monday! Getcha Chocolate Fix Here!🌞


Ultralight Chocolate Cake

Yield: 6 Servings


8 Egg whites
1/2 c Unsweetened cocoa powder
1 c Sugar
3 T Vegetable oil, plus extra - for the pan
2 T Cold brewed coffee
1/4 t Vanilla extract
1 Grated rind of small orange
1/2 c Whole almonds, toasted - and finely ground
2 T Flour, + extra for the pan
2 T Confectioners' sugar
1 c Fresh berries

Preheat oven to 350'F. Beat 6 of the egg whites until stiff. Set aside.
In medium bowl, combine cocoa with sugar, oil, remaining 2 egg whites,
coffee, vanilla extract and orange rind. Mix ground almonds with flour
and then add to cocoa mixture. Stir well. Add 1/3 of the beaten egg
whites. Mix with rubber spatula. Then fold in the remainder of the
beaten egg whites.

Pour into an oiled and floured 8*" springform pan.
Bake for 25 minutes at 350'F. (Be careful not to overbake.) Remove from
oven and allow cake to sit for 10 minutes before removing from
springform pan. Cool completely. Put dolly (or stencil of your choice)
on top of cake. Sprinkle with confectioners' sugar, then remove dolly
carefully, leaving lace design. Serve with fresh berries on the side.

Make 6 little desserts.

Chocolate Mint Sticks

Yield: 40 Servings


---cookie---

2 Eggs
1/2 c Melted butter
1 c Sugar
2 oz Unsweetened chocolate melted
1/2 t Peppermint extract
1/2 c Flour
1/2 c Ground almonds

-----peppermint filling-----

2 T Butter
1 T Heavy cream
1 c Confectioners sugar (sifted)
1 t Peppermint extract

---frosting---

1 oz Semi-sweet chocolate
1 T Butter

Preheat oven to 350. Grease a 9 inch square baking pan. Beat eggs. Add
melted butter and sugar. Beat well. Add melted chocolate and
peppermint. Beat. Add flour and nuts. Mix well. Pour ingredients into
prepared pan and bake 25-30 minutes until toothpick inserted in center
comes out clean. Remove from oven and set on trivet or rack to cool.

Prepare filling. In small bowl, thoroughly blend butter and cream. Add
sugar and peppermint. Mix well. Spread evenly over cooled baked layer.
Prepare frosting.

Melt chocolate and butter together in small pan over
low heat. When filling is completely firm, spread frosting mixture
on top. Refrigerate until chocolate is firm. Cut into /4 by 2 1/4
inch strips.

Chewy Peanut Butter Brownies

4 oz Semisweet chocolate
1/2 c Creamy peanut butter
1 c Margarine
4 Eggs
2 1/2 c Sugar
1/2 ts Salt
2 ts Vanilla
2 c Flour; sifted
1 c Walnuts; chopped

Melt chocolate, peanut butter and butter. In a large bowl beat eggs,
sugar, salt and vanilla. Add melted chocolate mixture. Add flour
gradually. Mix well. Add the nuts. Pour into a greased 13x9x2-inch
greased pan. Bake at 350 F. for 45 minutes to 50 minutes. Let cool,
cut into squares.

Chocolate Marshmallow Bars

2 oz Unsweetened chocolate
1/2 c Butter
1 c Sugar
2 Eggs
1/2 c Flour
1 ts Vanilla
1 c Chopped pecans
16 Large marshmallows

Preheat oven to 350 degrees F.

Grease an 11 1/2 x 7 baking pan. Melt chocolate and butter in
top of double boiler over hot water. Set aside.

Cream sugar and eggs until light and fluffy. Add flour. Beat. Add
melted chocolate and butter. Beat well. Mix in vanilla and pecans.

Pour into prepared pan. Bake 18 minutes. Remove from oven and
cover with marshmallows. Return to oven and bake until
marshmallows are lightly browned.

Cool slightly and cut into bars.

Now I know - chewy peanut butter brownies!
Minus the walnuts. They give me canker sores. Weird!
