What's for Dinner, Fri., July 18, 2025

Salad: beets, gorgonzola, toasted walnuts, ruffly lettuce, baby romaine. Basil leaves. Olive oil-lemon vinaigrette.

Toasted artisan bread with butter and smoked paprika.

Brown sugar, tamari, and Dijon glaze on Coho salmon.

Kombucha: cherry.

Dessert: lemon madeleines. Cold tea.

The Landlady’s niece and her boyfriend and my son and his girlfriend are joining us for a dinner sail.

Tortilla chips with guacamole and salsa. Beer, tequila and soft drinks.

Chicken thighs, legs and wings slow cooked in buffalo sauce. Served with blue cheese dressing, celery and mixed olives.

Macaroni and four cheeses with slices of green peppers, onions and chorizo. Cole slaw.

Klondike bars for dessert.

Too much food!

It’s a beautiful Friday evening on the Hudson River north of the Tappan Zee Bridge.

4. Asparagus, Butter Beans and Couscous

Steam-fried in evoo and veggie broth: chopped onion, shallots, yellow bell pepper and minced garlic. When soft I added sliced mushrooms and cut asparagus and cooked until just tender. I seasoned with chopped parsley and added Miyoko’s butter and canned butter beans and cooked for a couple minutes longer. Served over whole wheat couscous and sprinkled with my homemade vegan parmesan mixture. Cheers! 🥂

It was our turn to make dinner for the gaming group today, and an interesting recipe showed up in this week's WaPo: succotash with corn, baby lima beans, tomatoes, andouille sausage - and peaches. And there are no leftovers :=(
