Purple Carrot Plant-based Meatball Marinara with Orzo, Asparagus, and Peas.
This was a freezer aisle meal, which I never buy, but happened down the aisle and saw them. I was curious because of their one-time affiliation with Mark Bittman. Glad I tried this one, because it was very good.
I had been making a salad and suddenly got so hungry I couldn't stand it, so I warmed it in the microwave.
Now back to finishing my salad.
Kombucha: cranberry.
Dessert: strawberry fruit bar.

(25,978 posts)Potatoes and peppers roasted in the same pan, and green beans from the garden. As always, chocolate ice cream for dessert.

(1,476 posts)Steam-fried in evoo and veggie broth: chopped onions, red bell pepper and minced garlic. When soft I added sliced mushrooms and a good amount of fresh whole spinach leaves. When done I added cooked chickpeas, chopped fresh basil and parsley.l then tossed the veggies with whole wheat penne and sprinkled on vegan parmesan after plating. Cheers!🥂

(21,227 posts)Our first choice was closed for a kitchen renovation. We stopped at Cracker Barrel. I got a salad with fried chicken chunks. It was good. My daughter got a house salad and onion blossoms. I had a few of those. There were biscuits and corn muffins with the salad, so no dessert. It was late to eat a lot anyway.
It was just nice to get out for a bit
