SWEET MANGO AND CASHEW SALAD WITH CHILI-LIME DRESSING

I have served this sweet mango salad to
thousands of people around the country, from
ordinary folks to foodies, and it is always a hit.
The key to success is to use ripe, golden mangoes.
I opt for golden Philippine mangoes rather than the
red Mexican variety because they are less fibrous
and extremely juicy. Usually sold in cases of twelve
or six, they are in season during the summer months
only. You will find them at most ethnic groceries and
some select supermarkets. With fried shallots and
cashews, the mango salad is an explosion of sweet,
sour, and savory flavors on your palate all at once.
Serves 4
1/4 cup fresh lime juice
3 1/2 teaspoons palm sugar, or honey
1 fresh bird's-eye chili, finely chopped
1 teaspoon salt or two teaspoons fish sauce
3 ripe mangoes peeled and cut into `1/2" dice
1/4 cup finely chopped fresh cilantro leaves
2 tablespoons Fried Shallots
1. Prepare the dressing by combining the lime juice, palm sugar,
chili, and salt or fish sauce in a small bowl, stirring well to blend
the flavors.
2. Combine the mango and cilantro in a large bowl. Pour in the
dressing and toss to mix well. Toss in the cashews and fried
shallots, mix well, and serve.
