I admit, im a fan of Red, the traditional sloppy. When LilBit was here, I would put a color chart in front of her, and ask her what color sloppies, she wanted.
Her fave, was always White sloppies, brown the proteins , ground chicken and mushroom, in her case.so I didn't drain, a couple of nice big spoons of ricotta, for creaminess, and some shredded Swiss, for a bit of bite, and if it needs a bit of thinning, CREAM, this is a very heavy, rich tasting, Sloppy
And then, Brown. Same prep, a beef bullion cube, broken up, not diluted with water only, let it cook down ,let the protein fat diluted the cube its gonna be salty, more water, I add a couple tbs, of Dijon mustard, and then water only, to cut that salty,
Don't forget to , taste, taste, taste, as you cook.

(14,105 posts)I have only eaten the red sauce, brown ground beef style......this change up is something I will try... I believe I will use mozzarella cheese vs swiss...

Will add more" meltiness" but very little flavor, the Swiss, adds a bite, that doesn't, taste bad, mozzarella, will only, make this a pizza sloppy. Mozzarella is such a mild, white cheese, next step up Swiss, it has a bite.

(14,105 posts)I am willing to try it..I do eat swiss cheese alone with crackers...so why not try it for the tangy bite.
Sharp white cheddar, would work just, as well

I didn't mean to suggest, this is the only way.

New Jersey Sloppy Joes are famous. And delicious. And NOT that mush-meat crap!
A friend of mine grew up loving them in NJ. Whenever I get to a NJ deli I order an extra one for her - and immediately Fed-Ex it to her across the country. I OWN HER!
