RASPBERRY MOCHA FOOL

This may not be where it got its name, but a fruit fool is definitely the most idiot-proof
dessert around. It dates at least to seventeenth-century England, and consists of
sweetened, lightly mashed fruit folded into whipped cream. It’s often made with fruit
on the tart side, like gooseberries, rhubarb, or damson plums, since they complement
the sweet cream. Raspberries can really vary in their sweetness, so start by adding a
little sugar, then sprinkle in more to taste.

Makes 4 to 6 servings

1 (4-ounce / 110 g) chunk bittersweet chocolate, divided
1 cup / 240 ml heavy whipping cream, divided
2 tablespoons plus 2 teaspoons granulated sugar,
divided, plus more as needed
1 teaspoon instant espresso powder
1 teaspoon pure vanilla extract
2 cups / 230 g fresh raspberries

Coarsely chop 3 ounces / 85 g of the chocolate. In a small saucepan combine 1⁄3 cup / 80 ml of the cream with the chopped
chocolate and 2 tablespoons of the sugar.

Cook gently over medium-low heat, stirring frequently, until the chocolate melts
and the sugar is dissolved. Remove the pan from the heat and whisk in the espresso, the vanilla, and the remaining 2⁄3 cup /
160 ml of cream.

Transfer the mixture to the bowl of an electric mixer, cover with plastic wrap, and transfer the bowl to the
refrigerator to chill thoroughly.

In a small bowl, lightly mash together the raspberries and the remaining 2 teaspoons of sugar. Let the mixture stand at room
temperature for 15 minutes. Taste the fruit and sprinkle in more sugar if necessary.

Just before serving, use an electric mixer fitted with the whisk attachment to whip the chilled mocha cream to soft peaks.

Fold in all but 1⁄2 cup / 60 g of the berries. Spoon the cream into individual ramekins or small bowls and top each with a
spoonful of the reserved raspberries. Using a vegetable peeler, shave some of the remaining chocolate over each serving
