(36,627 posts)If not for the plantains at the end of their shelf life, I wouldn't cook today at all. It's 110 F and neither of us have much appetite in this heat. So tomato slices, English cucumbers, red onion, oregano, salt, pepper, dressed with olive oil and vinegar. K adds torn romaine to hers, and I add chick peas and artichoke hearts to mine. With a side of fried plantains.

(11,666 posts)I needed something that would use up the cilantro.
Start with wedges of ice berg lettuce. Add thinly sliced red onion and scatter black olive slices on the wedge. Put slices of hard boiled egg around and top with crumbled bacon. Small wedges of tomatoes around the sides. Pour a dressing of well mixed Balsamic vinegar and olive oil over the salad then top it with crumbled blue or Gorgonzola cheese. Finally, add thin slivers of grilled chicken breast and enjoy!

(1,225 posts)Chickenless mandarin orange nuggets from TJs with a good pile of Japanese fried rice (brown rice w/carrots, edamame, and hijiki) and penty of Szechuan sauce to spice it up. Will finish off the red grapes Ive been working on and call them dessert.
for supper, since we had a big meal midday, to celebrate my husband's birthday (which is not til Friday, but he has to work). Barbecued ribs and pulled pork from the best place in the area, augmented with homemade potato salad, coleslaw, and cheesecake with raspberries. But the best part of the meal was spending time with both our sons
