And how do you drain the tomatoes to prevent them from becoming soggy on the bottom crust?

I’ll slice the tomatoes then dry them out on parchment paper with paper towel. Then I’ll sprinkle them with salt to dry them out further as for tomatoes beefsteaks i picked up local produce market.
Not sure if they’re local or bought through a produce broker. Yet now i found another recipe calling for a creamier cheese called BOURSIN.
I just may make two the one i posted and this i found.

Yet as novice baker i have question.
As in using glass baking dish layered with puff pastry on bottom then adding tomatoes Boursin crumbled bacon then more tomatoes shredded cheese and so on.
And then cover with pastry top then bake it.

Childs recipe for tomato quiche is really good. Saved it for years. Has anchovies in it. I got three tomato plants in. Can't wait til they ripen.
