What's for Dinner, Sun., May 18, 2025

Once again, I'm putting in gardens, so I'll be working until late. Has to be a simple dinner.

Cucumber-cherry tomato salad with vinaigrette and basil, also mozzarella.

Lemon pepper chicken thigh.

Cherry kombucha.

Dessert: Half a brownie with walnuts and vanilla soft serve ice cream.

…with a little garlic dip for those stout green stalks. A nice salad with kale, baby gem lettuce, arugula, tomato, walnuts & blue cheese. Served with rosé.

Gonna halve them, brown in olive oil, toss in dried cranberries and walnuts, and douse them in raspberry-walnut vinaigrette at the end.

Recipe not too spicy - we kept adding hot sauce at the table. I couldn't think of a side, but had frozen peas that I'd used a little of for yesterday's beef stew, so we had those. Dessert is some mini cherry galettes from Aldi.
