What's for Dinner, Tues., May 13, 2025

Mollie Katzen has a Greek Pizza recipe that I'm going to make using a flatbread. It calls for spinach, lotsa' garlic, mozzarella, tomatoes, kalamata olives, and of course feta cheese.

Made up a gallon of kombucha this afternoon and bottled up six smaller bottles that were ready. Cherry, my favorite flavor.

Dessert: Cream cheese filled brownie. I've mixed cherries into the cream cheese. It's like a little sandwich. I might put some soft serve vanilla over the top so it isn't dry. I have a new tea, too: cherry pomegranate, so a hot mug of that.

The fish market in Liberty, NY is amazing. The proprietor goes to Hunts Point in the Bronx twice a week and his "catch" is always fresh and diverse.

Today we got some catfish. The Landlady is going to egg-'n'-batter the filets then pan fry them on butter with white wine and capers. Served with lemon and hot sauce with yellow rice and green beans. A bottle of Pinot Grigio will round out the meal.

Really tasty and really easy too.

1T chili crisp
1T soy sauce
1T honey
Thinly slice 3-4 scallions

Mix together. Marinate salmon.

One bunch asparagus. Snap the rough ends off. Everything on a foil covered or parchment covered baking sheet. Drizzle asparagus with olive oil and some salt. Top salmon with marinade.

Bake at 400F for 15-17 mins.

Goes great with rice or a salad.

Great quick recipe from the NY Times food section.

Serving over bucatini pasta.
Have a half loaf of artisan Italian bread.
Lotsa garlic in the jar right now so I am loading up the bolognese and some butter for the bread. Hopefully I don’t burn it which is my M.O. unfortunately…

Deep, dark, cab Sauvignon to go with.
