Easy Cabbage Soup

Ingredients:
1 medium onion, diced
2 cloves garlic, minced
4 cups chopped cabbage
3 carrots, peeled and sliced
2 stalks celery, sliced
1 (14.5 oz) can diced tomatoes, undrained
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried basil
Salt and freshly ground black pepper to taste
2 tablespoons olive oil

Directions:
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onions are translucent, about 5 minutes.
Add cabbage, carrots, celery, and canned tomatoes to the pot. Stir in vegetable broth, thyme, and basil. Season with salt and pepper.
Bring the mixture to a boil, then reduce heat and simmer, covered, for about 30 minutes, or until vegetables are tender.
Taste and adjust seasoning if necessary. Serve the cabbage soup hot, with crusty bread on the side for dipping.
