What's for Dinner, Tues., May 6, 2025

Posting early due to working late.

Falafel.

Caramelized onion hummus on pita crisps.

Big salad with artichokes, raw onion, black olives, pickled peppers, and using red tip lettuce and also Bibb.

Cherry kombucha.

Dessert is ?? Maybe will pick up something on the way home from work this evening.

Asparagus/sun dried tomato/sautéed red onion/lemon quiche
Green salad with cashews and I’m not sure what else/maple-balsamic dressing
Lemon water

Maybe a couple fig newtons later

…frozen ones, cheaper for my experiment, from Trader Joe’s. They are thawing now, and I plan to rub with a touch of oil and coat with a seaweed/sesame Japanese spice garnish and then cook them in a hot cast iron skillet. Sauce for the tuna will be of mirin, soy sauce, rice vinegar, a wee bit of cornstarch, and some ginger extract. Chopped scallions too.

Serving with some jasmine rice, sautéed shiitake mushrooms and broccoli, and a little salad of smashed cucumbers and avocado.

Fingers crossed…really don’t want to overcook the tuna! 🤞


Edit to add: my wife had to work really late unexpectedly, so I’ll have to make this for lunch tomorrow
