What's for Dinner, Sat., May 2, 2025

I made an interesting sandwich and it was all by chance. It's Genoa salami on cornbread with raw onion. You would not believe how good this is!

I only took it out of the 'frig as a quick snack to tide me over until I was free enough to make dinner, but it turned out to be so good I decided to make it dinner. I used mayo as the spread on the cornbread. Been dealing with the plumber all day today. Two upstairs baths getting new sinks and vanities.

I added some BBQ cassava chips, and that's dinner, except I'll have a salad in a few hours.

Ginger ale, kombucha, and cherry juice combo to drink.

Dessert: cookies and milk.

Will pop open a can of corn & slice a tomato.

Low on groceries here, well fresh produce, because it's been storming here for 2 days & I will never ask another go do something I'm not willing to do myself, namely drive in dangerous conditions to deliver a food order.

mac and cheese or a pork loin or mac and cheese. Either way I'll wash it down with either water, cran-raspberry juice or cold milk.

Salad with honey mustard dressing.

Your Genoa salami on cornbread with raw onion sounds good.

Loretta planted marigolds and coxcomb seeds next to the long hill of potatoes. She says it's nothing spectacular, (but I like the color).

Beef with green, red and yellow peppers, broccoli, carrots and onions. It's a leftover but was very good the second time around.

Was the corn bread a loaf? Or a muffin? Sounds like a good flavor combination.

I had sauteed salmon with mushrooms and some vegetable fried rice. Strawberries for dessert.

They are about 3" long, 2" wide, and maybe 2.5 high.

A lot of the time, cornbread gets crumbly and it's difficult to make a sandwich, but it works out well with these little mini-loaves.

Yep, it was a happy accident.

I bought some celery a bit over a week ago on sale; buy one, get one free. So I had almost two whole bunches of celery just sitting in my fridge. I made cream of celery soup, first time ever. Was pretty darn good. Had that with Rosen's Bavarian Black bread, buttered.
