What's for Dinner, Tues., March 4, 2025

Broccoli rabe and orechiette with lots of garlic and extra virgin olive oil.

I'm hoping to have time to stop after work at Trader Joe's and get that olive bread that one of our posters tried. Can't remember the name of it; it has a weird name.

Kombucha is ginger.

Dessert: Vanilla pudding and green grapes. Decaf coffee.

7. Snap Peas, Pasta and Paczki

Steam-fried in evoo and veggie broth: chopped onions, sliced carrots, red bell pepper, and minced garlic. When soft I added trimmed whole snap peas and sliced mushrooms. I added air-fried crispy tofu and a dollop of Miyoko’s butter. Continued cooking until peas were done, but still had some crunch. Added cooked chickpea rotini and chopped parsley. Vegan parmesan on top. Iced green tea with lemon. Had a paczki (pronounced “punch-key) a Polish jelly donut for dessert. Around here, today is Paczki Day…or Polish Mardi Gras! Cheers! 🍻
