What's for Dinner, Sun., Feb. 16, 2025

I made some gigantic stuffed peppers two days ago. I am slicing them horizontally and giving them a nice, golden brown in the skillet. They look attractive sliced because the filling solidified with the melted cheese and ground beef I used.

Also made a Savoy cabbage salad with Persian cucumber slices, dill, and scallion. Simple vinaigrette as the dressing. I found this recipe from a Ukrainian woman who has a section devoted to Ukrainian and Russian recipes:

Kombucha: cherry

Dessert: None. I had too many chocolates last night.

Chicken cutlets are marinating this afternoon in grated ginger & juice lime zest & juice, a bit of mayonnaise.
Potato salad will be boiled fingerlings, a little sweet onion and plenty tarragon, dressed with rice vinegar olive oil and a little Dijon mustard.
Boston lettuce, fresh radishes, an heirloom tomato, avocado chunks. Dressing TBD.
A Moscow mule while cooking…red wine from a box when we dine.
Leftover chocolate mousse.

Many hours shoveling wet heavy snow today…I’m totally wiped out! 😜

First time I made this recipe and it was delicious. After a lifetime of cooking this was the first time I ever used arborio rice and the risotto cooking process (I used veggie broth) and we think the dish came out well; I’d be very disappointed if it didn’t since I’ve seen various risottos made on countless cooking shows over the years. Besides the rice and mushrooms there was minced onion and garlic, sliced snow peas and toasted pine nuts in the dish. I also made a coleslaw with pineapple and a vegan mayonnaise based dressing. Iced black tea with lemon. Cheers!🥂
