What's for Dinner, Thurs., Feb. 13, 2025

Stuffed peppers using quinoa, ground turkey, onion, garlic, minced carrots, and celery. I have 4 giant red, yellow, gold, and green peppers to use. On top, of course, will be grated cheddar cheese.

Cucumber and tomato salad with dill, vinaigrette.

Pomegranate kombucha.

Dessert: hot chocolate. Hazelnut sandwich cookie.

Tonight I am having Spaghetti! I have thawed some of the sauce that I previously frozen in batches and angel hair pasta will be ready soon. Garlic toast with salted butter going in the oven next.

Side salad is marinated artichoke hearts and sweet red peppers in a vinegrette with minced garlic and other spices.

Whole milk over ice and water.

Brownies made with semi sweet chocolate chips much later for dessert with more milk.

Yesterday, I had blueberry pomegranate kombucha! I want you to give me your recipe, please. I need to learn how to make it because you've got me hooked.

Steam-fried in evoo and veggie broth: chopped onion, chopped red bell pepper and minced garlic. When almost done add broccoli florets and sliced mushrooms. Cook until done. Mix veggies with precooked organic quinoa, Miyoko’s butter and Penzy’s Italian Pasta seasoning. Iced black tea with lemon. Might have a few oatmeal cookies for dessert. Cheers!🥂

It's essentially a diner breakfast made into a frittata. Sliced cooked potatoes, onions, bacon, welded together with scrambled eggs, a reasonable serving per person. (2 rashers, 2 eggs, potato and some onion.) You can make a lot or a little. Parsley and salt/pepper as needed.

Fry the bacon (and crumble), brown the onions and the potatoes in the bacon fat, and pour the eggs over. Turn once. Cut in wedges.

5. My Grandfathers Artichokes

My grandfather came to Chicago to escape WW1 from Naples, Italy.

He taught me how to steam artichokes with garlic, herbs and parmesan cheese. I will serve them with garlic aioli.

Fun Fact I learned about artichokes is that they can help you sleep. I can't remember what in them is responsible but I do remember that one detail.

9. Homemade Calzone, attempt #2

It turned out pretty well! I froze half the dough I made last time and it defrosted nicely and rolled out like a dream.

Learning from my first go-round, I rolled the dough thinner this time and used more stuffing. Also used a big bowl to cut a perfect circle of dough so it looked neater.

Attempt 3 should be perfect. I didn't use egg in the ricotta mixture this time, or do an egg wash, because I'm running low on eggs. Found out they really do make a big difference in the texture of the cheese mix. It was still yummy.

Sautéed veggies and ham together, and then sandwiched them between thick layers of the cheese mix (ricotta, mozzarella, a little cheddar, parsley) before folding and sealing it up.

On the first picture I was wondering how you were going to get it onto the baking sheet. Somehow you did it!

I always like trying a new recipe over with my "improvements."

'working through the tri-tip we bought earlier this week. When we have large pieces of beef, we cook it rare and use it for leftovers for days. Today it was sauteed with onions and reconstituted dried mushrooms (a great pantry staple - they keep for a long time), with a little sour cream, over rice. And Chinese pickles, because I'm getting rid of leftovers.
