What's for Dinner, Tues., Feb. 4, 2025

Appetizer: crispy tofu cubes with sesame sauce (that sauce I keep talking about!)

Spinach and cheddar frittata which will be served in a wrap.

I used turmeric root to color my caramelized onions, which will be put on top when the frittata goes in the wrapper.

Sweet potato fries.

Pomegranate kombucha

Dessert: pear and Brie. Tea, orange-ginger.

Mine is a little more “meh” because I’m not the greatest or most experienced cook. But I’ve been trying lately. It’s kind of soothing to cook and bake.

I found a recipe on Serious Eats for Guinness beef stew so I made that (in oven braising now) with homemade parkerhouse rolls to go with it and some Oreo instant pudding for dessert.

and have received phone calls from NJ (!!!) and Iowa and Texas!

Returned home to hear of the UTTER insanity from tmp/msk, and felt SO MUCH BETTER!!!

On the way in, passed Governor Thomas Johnson bridge where an accident had occurred. LONG problem was resolved by the time OUR dinner had ended. WHEW!

9. Mac and "Cheese"

Plant-based version of a classic recipe except I used oat milk, Miyoko’s butter and whole wheat elbow macaroni to replace the dairy and refined wheat. Sauté chopped onion and minced garlic in Miyoko’s butter until done. Stir in flour and make a roux and thin out with oat milk. I gradually stirred in VioLife shredded cheddar until the desired cheesiness was achieved. I now blended the melted cheese mixture with cooked macaroni and added some salt and pepper to taste. I baked it in a 375 degree oven for 30 minutes. Served with snap peas and carrots on the side. Cheers!🥂
