What's for Dinner, Mon., Feb. 3, 2025

I cooked bratwurst, sauteed onion with Napa cabbage, and added a side of sauerkraut, too. Marble rye with cut Polish sausges from the Polish deli. Dijon mustard.

In addition, I mixed up more of my carrot salad, since I had it already cut on my zoodler. This time I put Greek yogurt mixed with a little lemon, dried pineapple and sprinkled it with chopped cashews.

Pomegranate kombucha.

Almond flour chocolate chip cookies for dessert, along with hot tea.

p.s. La Coliniere, scored a big container of Baby Bellas at ShopRite for only $1.49.

2. Sweet Potato Bake

Orange and purple sweet potatoes cut into cubes. Chopped celery, cauliflower florets, chopped green bell pepper, sliced red onion (lots of), chickpeas and minced garlic. Mix all ingredients with a little olive oil, oregano, onion flakes, cayenne and salt and pepper. Bake in a 9x13 inch roasting pan at 400 degrees for 70 minutes. 15 minutes before done toss on some sliced mushrooms. When done squeeze on some fresh lemon juice and enjoy. Cheers! 🥂

I'm finishing it up with a pint of Fin Du Monde ale. Yes, I went to the store on my lunch break specifically to get Mexican tequila and Canadian beer.

made with the leftover chicken from yesterday, and a homemade enchilada sauce because we have a lot of dried peppers and didn't feel like going shopping today.
