What's for Dinner, Tues., Jan. 7, 2024

I'm working late tonight, so I picked up an Italian -style wrap at the deli. It has spicy ham, provolone, salami, and pepperoni with Italian dressing on it.

I put it in the 'frig for later, but have my slow cooker warming up soup that I made with broccoli and pepperjack cheese. This will be nice to walk in the door to, as it is very, very cold here.

We didn't get much snow--just a dusting--but there is wind.

Dessert: hot chocolate with marshmallows.

I again, bought a rotisserie chicken over the weekend...I'll make stock with the bones and then add my remaining chicken to broth with noodles and carrots... probably a grilled cheese sandwich with it...Sweet tea to drink...

Your broccoli cheese soup sounds good....different cheese choice.... I like it.

If I don't have to stay too late at work, I'll upgrade the potatoes to colcannon. I also have cabbage in the freezer

Now if I can find some way to make onions last a year...

Squeeze the water out of a block of firm tofu and mash. Steam fry in evoo and veggie broth: chopped red pepper, sliced carrots, chopped onion and garlic. When soft add sliced asparagus and mushrooms. When done mix with the mashed tofu and add seasonings. I use Jax Tofu scramble and Penzy’s Sunny Paris seasonings. Nutritional yeast is also good if you don’t have Jax since it’s the main ingredient. Iced black tea with lemon. Cheers!🥂
