Like Polenta? Try this!

I love it

Cook polenta according to pkg directions (my go to is Bob’s Red Mill).
I always add milk or half n half as part of the liquid amount.
Crisp up prosciutto slices
Top the polenta with butter, Parmesan, prosciutto and green onion. S&P to taste.

It is delicious. The salty bacon is a great addition to the more bland grits. The parm gives that umami flavor and a little funk and the green onion gives it bright freshness.
Mmmmmm!

I had it as my meal this evening but this would be fine for breakfasts (add an egg or not) or as a side dish. It’s pretty darn easy too.

ragu (Bolognese sauce). But the leftovers were the best! Sliced and put in the toaster: OMG how delish! FWIW our polenta was ALWAYS made with white corn.

The contrast of the crisp exterior and soft interior is great. And it's especially good with a hearty ragu

I love polenta even with just butter and cheese. The bacon and green onions would certainly make it even better!
