What's for Dinner, Mon., Nov. 18, 2024

General Tso's Chicken over Rice.

Cherry kombucha.

Dessert: Angel food cake with blackberry Greek yogurt. Fresh blackberries!

Later, as in this evening, I'm using the mandoline to thin slice Brussels sprouts. I intend to saute them in sesame oil. Should be good for a late-night snack.

1. Tofu Asparagus Scramble

Squeeze the water out of a block of extra firm tofu and mash. Steam- fry asparagus, chopped red pepper, carrots, onions, mushrooms and garlic. When done, add the mashed tofu, a couple Ts of Jax Tofu Scramble mix and a T of Penzy’s Bright Paris spice blend. After plating, top with chopped tomatoes, parsley and Trader Joe’s vegan Parmesan. Toasted baguette slices with pine nut hummus. Iced black tea. Cheers! 🥂

With some sweet chili sauce.
And then some simple scallion, leek and vermicelli soup with beef broth. Jacque Pepin style soup.

4. Beans and greens

Some old domingo rojo beans, collard greens, onions, and sausages cooked together in the Instant Pot.

Note: if you're sausages are frozen, let them thaw to the point where you can prick the skins with a fork before you put them in the pot. Otherwise they'll explode in the pressure cooker. Still edible, but kinda weird looking.
