Anyone ever prepared Eggplant with Chermoula?

Eggplant is roasted in the oven - cut side down.

Lemon is zested, garlic is crushed, cilantro is chopped…

but I am not sure how to eat it. Slice, cube, or just scoop it?

7. I am grateful to the experts on this group that suggested to use both aluminum and parchment

As I used for this dish. Parchment prevents the food from sticking and the foil keeps the dish clean. Just lift both to the trash and nothing to scrub.

9. bet grilling the eggplant over wood or charcoal would be even better

(or meat instead )
