I don't waste food or money.
Crockpot. Jarred mushrooms, carrots, broth. Looks horrible.
Eating it over brown rice. Not looking forward to it.

(17,708 posts)I got some cooked turkey slices at Sprouts, sauteed a frozen (and thawed) mirepoix mix (most are fresh and don't last by the time I use them) and added broth.
Voila! A very nice turkey vegetable soup, with few ingredients, none requiring a chemistry degree to decipher.
Similar to your OP.
Broth just needs to be the good kind, not the one loaded with MSG and who the hell knows what else.
P.S. you can freeze the fresh mirepoix. There are two kinds.
Onions, carrots and celery, and
Onions, peppers and celery (Cajun style)
