Does anybody have a quick and easy fig jam recipe? My SIL gave me a bunch of very ripe figs

…from her trees — probably a couple of cups when mashed. I plan to refrigerate the results and use them soonish. But if I don’t do something with them soon they will get all fuzzy & have to be tossed.

Thank you for any ideas.

all jam is basically cooked fruit and sugar...

…of pages with recipes and opinions galore. Mostly opinions and ads — I realized I was going to have to read a long way just to get to the ingredient list.

So I think tomorrow I will just do it, and I thank you.

Smaller figs are easy to freeze, by the way. Just rinse well and drop into a ziplock bag with the date on it.

I've had grilled Mission figs with sauteed almond slices and goat cheese on homemade crackers -- very good ! Served at the Liberty Bar several years ago. They've done other variations, w/dried cranberries, grilled pita.

ETA: Fig cookies are an Italian tradition; just Google "recipe fig cookies" and you'll find dozens.

1/2 (14.1-oz.) pkg. refrigerated piecrusts (1 piecrust)
3 cups fresh figs, stemmed and quartered (about 15 oz.)
4 large eggs, beaten
3/4 cup granulated sugar
1/4 cup all-purpose flour
1/4 cup unsalted butter, melted
2 Tbsp. fresh lemon juice (from 1 lemon)
2 tsp. ground ginger
Whipped cream

Directions
Prepare crust:
Preheat oven to 425°F. Fit piecrust into a 9-inch pie plate, pressing into bottom and up sides. Fold edges under, and crimp, if desired.

Fill crust:
Spread figs in an even layer in piecrust. Combine eggs, sugar, flour, butter, lemon juice, and ginger in a medium bowl, and stir vigorously until well blended. Pour over figs in piecrust.

Bake pie:
Bake on bottom rack of preheated oven for 10 minutes. Reduce temperature to 350°F; bake until center is set, about 40 minutes more. Cool completely on a wire rack, about 2 hours. Serve with whipped cream.
