What's for Dinner, Mon., Aug. 1, 2024

Club crackers and green pepper chips with vegetable cream cheese.

Chicken legs in mango habenaro sauce. Bought these at the grocery store deli 'cuz it's too humid to cook.

Peach kombucha.

Dessert: watermelon.

I have a package of Kevin's coconut Thai chicken so I thought I'd have that over rice with an avocado/nectarine/cucumber salad with pumpkin seed oil.

I bought some bell peppers on sale at the grocery yesterday so I think I'll make dinner for my buddy and me... stuffed peppers came to mind when I cut up most of them to freeze. I left the good ones to stuff on the side.

It's my turn to cook dinner.

Start with a dozen raw oysters served with lemon, spicy cocktail sauce, malt vinegar and chopped onions. Today I learned that the suggestion that you should only eat oysters in months that have an “R” only applies to wild harvested oysters. Farm raised are okay year ‘round.

Linguini with white clam sauce. We’re in the OBX and the fresh seafood is gorgeous. Garlic bread and a green salad with tomato, red onion rings, black olives and almond slivers with a creamy Caesar dressing.

Popcorn and sodas for dessert as we watch the convention. It’ll drive my MIL crazy as she’s a lifelong Republican. To her credit, in 2020, she left the presidential vote blank and she says she’ll vote for VP Harris.

you can fix dinner tonight. So I hopped in the Ford Escape, drove eight miles down the road to Arby's and picked up 4 roast beef sandwiches. Air frying some frozen onion rings to go with our sandwich.

Zucchini brownie before bedtime.

Good Evening
