Appetizer is yellow zucchini with mint and garlic, and goat cheese on top of crackers.
I made this the other day as a side dish, and was happy with how it turned out. I decided that it has possibilities as an appetizer, so I decided to do another round today. This time I cooked the zucchini longer to make it crisper.
Turkey meatballs made with grated vegetables. Grated carrot, yellow zucchini, chopped Vidalia onion, and marjoram from the garden.
Pasta with tomato sauce.
Dessert: pumpkin pie.
Kombucha: cherry.

(1,800 posts)My husband took a vacation day today, so instead of going out for lunch, we had these: https://www.nutmegnanny.com/loose-meat-sandwich-maid-rite-copycat/ I think these would be satisfying even to non-Midwesterners who didn't grow up eating these like I did
