What's for Dinner, Thurs., Aug. 8, 2024

Just arrived home, stuck in traffic, from union meeting.

At the meeting, we had big plates of sandwiches. All kinds: vegetarian, tuna, roast beef, curry chicken, and balsamic glazed salmon. The breads were interesting, too. There were artisan breads with seeds, different kinds of wraps, like tomato (red), spinach (green), sourdough, grain and seed breads, and raisin bread.

There were platters of various salads: green leaf and vegetables, pasta salad, chopped salad with carrots, peppers, garbanzos, and feta cheese.

Cookie tray for dessert: brownies, chocolate chip/walnut, black and whites, sugar cookies, and shortbread cookies.

Since we finished up late, I'm just going to have honeydew melon later, if I get hungry.

to have freezer dishes like that? When I put something like this in the freezer, it's almost as good as putting extra money in the bank.

There is a cookbook that came out about a year ago that tells how to make slow cooker dishes and put them in freezer bags. They are all ready for a day when you have no time, like the one I had today.

If I find out the name of this cookbook, I'll mention it on one o the daily threads.

Between this heat and radiation treatment, I haven’t had much energy to cook for myself. But I did have a nice salad because I had the foresight to make an extra when I made salad yesterday. Washed it down with a protein shake. Boring, but easy and nutritious.
