What's for Dinner, Thurs., Aug. 1, 2024

Corned beef on rye. Dijon, lettuce, mayo.

Cold cucumber salad with tarragon, Vidalia, and sour cream/mascarpone.

Peach kombucha.

Dessert: half a Haagen Daz bar. (the first half I had at lunch)

1. Zucchini casserole

and I made some zucchini fritters. Both are so satisfying!

And leftovers for a couple days

I got some blueberries at Aldi's yesterday. I opened them, and many will go to the birds. I'm making almond flour blueberry zucchini bread with the good ones.

Every summer, I have to relearn how to spell zucchini :/

After a big plate of watermelon. Nummy! Will probably make a strawberry smoothie later with stevia.

Our heat index here today is 105. Humidity is terrible.
