who has all of the ingredients at hand, unless you were planning on advance. And by the way, this looks really, really good, I'm always looking for a chicken/tomato sauce recipe to try and hang onto. Thanks so much.

1 3/4 teaspoons kosher salt, divided (MIGHT HAVE, doubt it, maybe sea salt instead

8 ounces fresh cremini mushrooms, sliced (a substitute for cremini mushrooms, here are some options: White Mushrooms

2/3 cup sliced shallot (Shallots certainly aren't more popular than onions, otherwise they'd be far more abundant and less expensive.
Shallots are somewhere between the flavor of garlic and onion, but also a good deal milder/sweeter. Use if you do not want the strong taste of onions. Also, I do substitute chopped up red onion or green onions, depending upon the flavor I'm craving at the time.

1/2 cup plus 1 tablespoon (optional) sweet vermouth, divided (use red wine as a substitute)
