What's for Dinner, Tues., July 16, 2024

Beet salad with ruffly green lettuce, nasturtium leaves and flowers, feta cheese, toasted walnuts, and Caeser dressing. Wheat crackers for crunch.

Went to the sushi store and bought crab avocado rolls, so that's the main dish.

Dessert: cold coffee (decaf) and baklava.

So I'm making corned beef with cabbage, potatoes and carrots.

Just pop the brisket into the Instant Pot and let her rip for 70 minutes. Take out to rest. Chop up a few veggies and pop in the Instant Pot for 3 minutes.

Voilà! Dinner!

I made some snacks for a light meal, mainly for my daughter. I had some, but not really a meal. The shake filled me up.

Spent most of the day fiddling with it, and it turned out WONDERFUL. I now have something like 8 individual servings in containers and in the freezer, properly dated and labelled.
Mmm - mmm.

After camping with a friend.
Had to work so took an ear of corn and made Elote because we have all the ingredients to go with it handy and cheap.
Turned out great. I used Tahin instead of chili powder. Chips and salsa and avocado spread with it.

Can use sour cream in place of crema by diluting with the lime juice. I bet plain greek yogurt would work too. Also, I cook my corn OFF the cob in a frying pan with butter. No need to boil.

Elote is available at a lot of festivals carnivals etc. Almost always get the treat.
