What's for Dinner, Mon., July 8, 2024

Vegetable wraps. I have two kinds of fillings. One is yellow zucchini and carrots with onion, garlic, basil, red pepper flakes and gruyere.

The second is similar to yesterday's with broccoli and red pepper only this time I put in gold, orange, and red pepper along with the garlic and leek broth in which to cook them. The cheese for this one is fresh mozzarella cubes. Also red pepper flakes.

Kombucha will be Key Lime.

I'm also making spearmint tea.

For dessert, Yasso bar--coffee/chocolate chip.

It's so hot here I have no desire for anything but vegetables. Oh, and Yasso bars, of course! 90 right now.

Marinated in chili garlic oil. Will heat the cast iron to sear and then finish in the oven.
Some naan to accompany.

2. Pot Roast sandwich

Yesterday was Pot Roast Day (yay!) so a beef sandwich with mayo, cheddar, caramelized onions, and spinach on brioche.
Went to the farmer's market with Mom yesterday. For a side, I'm making a cucumber and tomato salad with a vinaigrette recipe a friend sent last week. The tomatoes from the farmer's market are nice but can't wait to pick some from my plants! They look great and a few are juuuuust starting to change color.
Coffee to drink.
Watermelon Italian ice for dessert.

Loretta says she'll make us Rootbeer floats before bedtime. Now that's something for me to look forward to. 😋

had a little bit of ground beef left over, and added some mushrooms to bulk up the sauce. With homemade giardiniera
