What's for Dinner, Sun., June 23, 2024

Chinese dumplings with hoisin sauce. I put chopped chives over the top.

Sliced cucumbers in mirin. Chopped scallions.

Cold mint tea, made from garden spearmint.

Oven cooked St. Louis ribs, green beans, and French potato salad (sliced red potatoes with parsley, dill, and scallions with a Dijon vinaigrette dressing).

6. Chicken Parmesan Meatloaf

I stumbled upon some recipes, I combined two that sounded good.

It is meatloaf as you would expect with the added attraction of pesto and mozzarella rolled inside the meat and baked. I was intrigued enough to make a half recipe.

8. My daughter brought me a picnic dinner

She brought me homemade baked, beans, homemade slaw, fresh corn on the cob, and some pork ribs. I dropped off a couple packs of ribs for my s-i-l for Father's Day. He made some today and shared. Yum! I had leftovers to eat, but I'll have even more tomorrow

The corn was sublime. Beans and slaw stellar. Ribs a delightful bonus.

I have good kids

There was grilled wings, hot dogs, potato salad, pesto/pasta salad, fruit salad and birthday cake.

The cake was a big hit. Here's Dad blowing out his candles (w/ my SIL looking on)
