What's for Dinner, Mon., June 17, 2024

I made up my own salad recipe. I'll call it Shrimp or Chicken Salad with Mangos & Tangerine over Tossed Greens.

I marinated a few servings each of chicken and shrimp in orange sauce so there is a choice.

The mango-tangerine mixture also has cucumber and shallot. A little cayenne.

The greens are oakleaf lettuce and ruffly mustard greens, which are so delicious with citrus. I added a plentiful number of peppermint leaves. Toasted almonds over the top.

I made a citrus dressing with pineapple juice, olive oil, and lemon juice.

Cherry kombucha to drink.

I cut up an entire melon into cubes and put it in the refrigerator, in preparation for this weather.

It's too freaking hot to even think of actually making something. I might have to go out and buy another watermelon, just to get through the week.

Cantaloupe and watermelon I cut them up, 92 degrees out Biglerville pa area.

Made breading out of instant mashed potato flakes, seasoned up with lemon pepper, salt, garlic power, and a touch of cayenne. Threw a shake of Italian seasoning in there, too.
Jasmine rice and garlicky broccoli as the sides.

Not bad! Overcooked the cod, though. Left it sitting in the off air fryer for a few minutes while making the broccoli, think that’s what did it. Will try this again and experiment with spices.

Dessert/Midnight snack: Blueberry banana smoothie.

(Obviously mango has to be good and ripe.)

Had Salad from Chipotle for Br/Dunch,) greens, pinto beans, chix, corn, mixed vegs, guac, salsa, chips.

Iced coffee and iced cream later.

I had doctored up frozen pizza.

I worked in the basement today, going to create a quiet area. Lots of work to be done. Finally in the mood to do it.

I used some of it to make a steak sandwich with provolone cheese on thick sliced homemade bread. Just now we picked more blueberries, so probably a blueberry sundae here shortly.

9. Leftover lunch

Had a lunch shift and ordered a sammie after and ate a 1/3 of it with some pablano soup. The potato salad and the rest of the sandwich are in the fridge waiting for the afternoon snack to wear off. 😉
