What's for Dinner, Sun., June 9, 2024

Pasta salad with chicken. It will have cherry tomatoes, black olives, red and gold peppers, celery, zucchini, Vidalia onion, and chopped turkey bacon. Broccoli rabe heads and flowers, ciliegine (mozzarella). Herbs: basil, marjoram, and parsley. Vinaigrette made with olive oil and red wine.

I will serve this over a bed of oak leaf lettuce leaves.

For crunch, pita and bagel chips on the side. Jalopeno/artichoke dip.

Cold mint tea with ginger and frozen pineapple (I whip this up in the blender). I make the mint tea using leaves from the garden.

Dessert: peanut butter cup soft ice cream (new kind).

(Indian lamb stew), over rice (cauliflower rice for me). Cucumber and tomato salad on the side.

We had pretty much all the spices - my dream house would have huge spice racks with all the jars matching and neatly alphabetized, lol - and some lamb stew meat bought pretty cheap on a "managers special" so it really wasn't that extravagant.

grilled gojuchang chicken thighs from one of Maangchi's cookbooks, kim chi pancake, leftover cucumber salad from the other day, and rice. With plenty of leftovers for tomorrow.
