What's for Dinner, Tues., June 4, 2024

Bought some ready-made meatballs in tomato sauce at WF. Tried one already; they are very good. I may just make some spaghetti.

I'm also going to make a Greek salad with the big head of Batavia that I just cut last night. It will have green feta-stuffed olives, artichoke hearts, sliced orange pepper, feta cheese, giant capers, and parsley. Scallion and cherry tomatoes, too. For the dressing, I'm making red wine vinegar & olive oil with chopped oregano from my herb garden. Will also have minced garlic and the usual S & P.

We had a primary today in NJ. I VOTED!!

tried the newly reformulated "Beyond".

Definitely an improvement over their old formula - now just about as good as "Impossible".

Our neighbors called and asked if we wanted to go. I been grading the driveway all day and was starving. Wife was working in the garden all day and also hungry. So we got cleaned up and went into town and had a nice meal with friends.
