What's for Dinner, Sunday, May 5, 2024

Sheet pan dinner: Honey & Turmeric Chicken Thighs with Olives. Has a couple lemons, honey, dry white wine, lotsa' garlic (a whole head!) capers, raisins, olives. Bay leaves and parsley.

I'm using half a chicken, though, instead of the thighs.

It's raining here and a bit on the cool side, so this will be a nice aroma to have floating through the house.

Pineapple kombucha.

3. Garlic!

Was just weeding my garlic beds and thinking of dinner. I'm almost out of last year's haul. I pretty much put garlic and red onions in everything I cook except pancakes.

10. It's good to have your own garlic

A lot of what is in the stores is from China and has chemicals to prevent it from growing. It’s easy to spot due to the very short roots.

If I ever write a cookbook every recipe will start with this sentence

4. Southwestern-style salad

with several greens, roasted corn and chicken, black beans, Parmesan cheese

5. I made a salad

and while I was in the kitchen, jalapeno chicken. It'll be ready if I want it.

6. Mexican Grilled Tofu, Spicy Mexican Slaw with Lime and Cilantro,

and oven roasted Yukon Gold potatoes.

It's a bit of a Cinco de Mayo meal, although why we celebrate Mexico's history over the French is beyond me. I really don't need an excuse to eat Mexican food!

7. Lamb stew

with lots of vegetables. Buttermilk potato rolls that I made for today's church potluck. I had also made chicken and noodles, and Salade Nicoise. I'm thinking tomorrow's workday supper will be leftovers.

8. Whole chicken in the crockpot

Gravy, mashed potatoes, honey-glazed carrots.
I’m stuffed.

11. Chinese delivery

We got home late after some volunteer work went on a lot longer than expected and didn't feel like making dinner. It's a great place, but their delivery portions are huge - which means leftovers for lunch most of the coming week.
