I harvested a big head of broccoli at the garden today, so I'm going to make a pizza with broccoli and mozzarella cheese. Also roasted red pepper and garlic. Bits of goat cheese here and there, too.
Tossed green salad.
Tart red cherry kombucha.
Spicy chai tea; Werther's to go with it.

(15,264 posts)I just watched Kenji make pork katsu, so I was inspired to make chicken katsu.
A hack for chicken Ive learned recently is to marinate boned chicken thighs and freeze them flat in ziplock bags. I can get three into a bag laid flat. When i want to cook chicken, its easy to detach one frozen thigh from the rest and put it into the fridge to thaw. Today I used one thigh to make chicken katsu.

(27,850 posts)I made a small pot roast yesterday. Carrots, potatoes, and peas -- the peas were cooked separately. Turned part of the broth into a nice thick gravy. Today I finished up the carrots, potatoes, and peas. Tomorrow I will make a beef with barley soup, and will probably freeze three or four portions, maybe more.
On Wednesday I plan to make Chicken of Muchness.
Retrograde
(11,101 posts)with some of the leftover chicken from Sunday (but not all of it - may make chicken fried rice tomorrow or Thursday with the rest), minced onions, avocado, some slices of leftover Swiss cheese, and Trader Joe's enchilada sauce. I've made enchilada sauce from scratch once - TJ's is almost as good and a lot easier!
