I fixed myself a tuna melt

Very basic tuna salad, on thin sliced homemade white bread, butter, Gouda and extra sharp cheddar cheese. Had some fresh radishes on the side. It was a treat

Something about the toasty bread, the melty cheese...yum.

I like it with heirloom tomatoes...so delicious.

and I miss them so much. I really liked fresh tomatoes stuffed with tuna or chicken salad. And toasted tomato sandwiches

I love tuna salad, egg salad, and ham salad sandwiches. My brother still calls me weird - he who went through his entire school life living on peanut butter and apple jelly sandwiches.

When I have the time, I mince up celery, onion, and green pepper to stir through the tuna. Then add a dab of mayo, a squirt of yellow mustard, and a tsp of sweet pickle relish. When I’m in a hurry, it’s just mayo and jerk seasoning.

When I'm serious, I add onions, celery, sliced green or black olives (or both!) a bit of garlic, a chopped hard boiled egg, mayo, a dab of mustard. I think that's the main ingredients.

I like tuna with sweet relish, but never have it on hand. I used to like topping chicken, ham, or tuna salad sandwiches with potato chips, but they are out of my diet.
