OK, what's up with this?

I bought broccoli at my green grocer.

The florets looked fine: firm and green.

But the stems were pure white. Not even chiffon green.

If there is no green, there is no chloroform, right? And no chloroform means likely little or no nutrients, right?

It was one thing for strawberries to be red on the outside but white on the inside. But broccoli?

Anyone have an opinion on this?
