half of this naan bread with mozzarella, yellow tomato, and tomato sauce on top, along with an egg. I took the photograph before I put on my spicy wasabi microgreens.

I was just informed that the mozzarella had a spread underneath it of smashed garlic, marjoram, basil, and Malden salt. He made it into a sort of spread and covered the naan breads (4) with it. Underneath the yellow tomato slice, he put a cherry tomato from a can of Mutti tomatoes (the best!) and layered the yellow tomato slice on top, then punctured it so the juices from the cherry tomato ran over the rest of the toppings.

As he told me this, I noticed a sly little smile. He gets such a kick out of inventing these flavor tricks.
