Found this in a 1981 Southern Junior League Cookbook.
1-pound cream style cottage cheese
2-eggs
1-C flour
1-tsp salt
2-Tbls sugar
1/4 C +- butter for frying
1-C sour cream for topping.
Mix cheese, eggs, flour, salt, sugar. Mixture will be thick. Fry in butter, making 1/2 cup patties 3 inch round. Fry 8-10 until lightly brown, turning once. Top with sour cream and sprinkle with sugar.

ETA: it looks a bit bland to me, so I'd probably add some chopped scallion or broccoli or chopped walnuts or....

(1,040 posts)ago. They used pecorino and wrapped it with prosciutto. Definitely want to tweak and try this one.
