What's for Dinner, Fri., Nov. 10, 2023

Sheet pan dinner with chicken thighs, poblanos, red onion, and breaded green tomatoes. Also stuffed olives. Everything but the breaded green tomato is tossed in olive oil, S&P. Really simple.

After it comes out of the oven, crumble queso cheese over the top. Chopped cilantro, too.

Love these sheet pan dinners. So easy and so good.

Pineapple peach kombucha.

Dessert: five-seeded almond bar (TJ's) on which I put a little cream cheese. Decaf coffee.

We're having guests tomorrow and I'm prepping part of tomorrow night's dinner tonight, so we're going with easy peasy.

7. Oysters (and maybe potato pancakes)

Yeah, it's a weird combination. The local corner store has a connection with local fishers, and they take orders for a limited amount of seafood on Fridays. This week it was oysters and hamachi collars (dinner tomorrow), so we ordered a couple dozen. Now for the hard part - shucking them.

If we're still hungry afterwards, I'll make pancakes with the leftover potatoes from the other night.
