I was thinking about Sunday meals at Grandma's. She used to make roast chicken with mashed potatoes or meatloaf with mashed potatoes.
So I made pureed cauliflower with white cheddar (to do a low-carb imitation) and I already had turkey meatloaf ready to be sliced.
It was nice: reminded me of happy times when I was a kid.
One thing Grandma did that I don't though, is put sugar on tomatoes! I had some sliced tomatoes but left off the sugar.
As the day ended, we would watch television and I remember one show was "Mr Ed," the talking horse. Grandpa thought that was the funniest show.

(11,480 posts)Portobello mushroom caps stuffed with roasted tomatoes, Panko, garlic, onion and cheeses, baked locally-grown acorn squash with Vermont maple syrup and a platter of roasted vegetables: cauliflower, broccoli, tomatoes. Also lemon water. Delicious.
(fried tortilla pieces with scrambled eggs, cilantro, cheese, onion and jalapeno) with black beans on the side, as well as salsa, extra cheese, hot sauce and avocado. Based on: https://pinchofyum.com/migas-day-every-day
I also baked a honeynut squash that I'd gotten at the farmers market. Tastier than butternut IMO.
Mr. Ed was a favorite of mine, too!
